Homemade Pancakes

Natalie and I made pancakes this morning...from scratch! I have been doing this lately and now am wondering why I ever bought pancake mix, it's so easy and really good. Natalie poured the ingredients in the bowl after I made the measurements, I think she really liked it.

I wanted to share this recipe, because it's the best one I've found, whip up a batch!

Favorite Pancakes

1 1/4 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil

Makes about 10 pancakes. Another thing I've been doing is freezing the pancakes, which makes for a really easy breakfast later in the week, just pop them in the microwave and they're ready to go! I freeze them on a baking sheet and them transfer them to a plastic bag.

Next I'll have to try the wholewheat pancakes.

Thanks for the recipe. We used a mix last weekend and the result was barely edible. Homemade ALL THE WAY.
